White Toreador: We Twist Again with Código 1530 Tequila

 
 
 

We love our Margaritas as much as you do, but there’s no better introduction to tequila cocktails than the Toreador. A fruity cocktail that pairs the agave spirit with apricot brandy and fresh citrus, it’s said to predate the first written reference to the Margarita too, as seen in William J. Tarling’s tome, the Café Royale Cocktail Book published in 1937.

Jigger & Pony first twisted this tequila classic in our second menuzine titled “Let’s Drink Better!“ with the use of freeze-dried yoghurt. Smooth and slightly creamy on the first sip yet sweet and sour on the finish, our 2019 White Toreador was a hit (if we do say so ourselves).

While developing IDENTITY, we dug into our cocktail archive for a worthy tipple to revive in the section “A Twist on the Old Familiar“, and settled on bringing the White Toreador up to date with fresh, natural ingredients that perfectly balances the earthiness of tequila.

White Toreador: Código 1530 Blanco Tequila, Merlet Apricot, yoghurt, lime, egg white

This time, we looked to Código 1530 Blanco Tequila for our new twist. Produced with fully mature Blue Weber agave and rainwater filtered through volcanic soil, the beauty of the spirit shines with pure agave flavour. This gold medallist at the 2022 San Francisco World Spirits Competition is then used in two ways.

It is first fat washed with Greek yoghurt to create a yogurt tequila. Higher in protein content and less lactose compared to regular yoghurt and milk, it contributes to a creamier mouthfeel. This is then shaken with fresh lime juice, egg white and more unadulterated Código Blanco Tequila at the bar, for a velvety tipple that perfectly balances agave’s earthy notes with the vibrant fruit flavours.

The result? A delightful boozy beverage suitable for anytime of the day - and a great introduction to tequila cocktails.
